This is Yakgwa – a 700-year-old Korean dessert. We bake it instead of frying, so it’s lighter, and it’s glazed with rice syrup. Baked Yakgwa is a traditional Korean pastry made entirely vegan—with wheat flour, vege oil, and rice syrup, without any animal products. Unlike the deep-fried original, this version is oven-baked, soaked in rice syrup (a process called Jipcheong) over 24 hours, and air-dried over 24 hours. Each batch takes 3 full days to complete, allowing the flavors to deepen and the texture to become perfectly chewy and delicately crisp. It's a thoughtful, time-honored treat reimagined for modern, plant-based tastes.
